I just love this show. I followed the whole season via the web. This is the only show that brought me to tears. I never heard such wonderful talent in one place.
I love this year's winner. Y'anna Crawley stole my heart from day one and never returned it. I was so happy to hear that she won. Her single from her upcoming CD is a winner too. I can't actually wait to it hit the stores self or the MP3 sites ie: Amazon, I-tunes, Musicmatch so I can get my praise on.
But why should wait. Take a listen to what I mean.

All this is making way for what Christ has in store for me. I have no doubt that I'm truly blessed. Most don't have those thing i called myself fretting over. Most don't have a venue where they can praise the Lord with all their might.

Mayday
The producer had another gig in California, that he informed me of two weeks in advance. He even went as far as to set up arrangement on how and when i should arrived for our regular scheduled show. All his hard work and plans went out the window Saturday 16Th, 2009 because I was not at the right place at the right time.
I was at my regular spot waiting for my regular routine to happen. When I realized that it won't going to happen,like it usually does it was too late to make alternate plans. I suddenly remember the conversation with the producer and his stern words "Don't Forget".

I apologize to our listener that expected another great show and received nothing but dead air.

This Feed Your Tummy comes courtesy of The Food Network. Check your local cable or satellite provider for time and listing. This Mother's Day meal was prepared on the "Everyday Italian" Show. Here's a simple but delicious meal to make for your mother.
Salmon with Puff Pastry and Pesto

Show: Everyday Italian Episode: Ingredients in 15 Minutes
Ingredients
4 pieces of purchased puff pastry, each cut to be just larger than a piece of salmon
4 (4 to 6-ounce) pieces salmon
1/4 cup sliced almonds
1/4 cup purchased pesto
2 tomatoes, sliced
Directions
Preheat the oven to 400 degrees F.
On a foil-lined baking sheet, place the 4 pieces of puff pastry. Also place the 4 pieces of salmon, being careful to make sure they are not touching. Sprinkle each piece of salmon with 1 tablespoon of the sliced almonds. Bake for 10 minutes.
To serve, place each piece of puff pastry on a plate. Top each puff pastry with 1 tablespoon of pesto. Top the pesto with 2 slices of tomatoes each. Top the tomatoes with the salmon and serve.

Feed Your Tummy

This week recipe comes from the Food Newtwork. It A nice spring salad with my favorite thing Chicken
Fried Chicken Salad

Ingredients
1 (12-ounce) box popcorn chicken (recommended: Tyson)
Directions
For dressing:
1/2 cup ranch dressing (recommended: Hidden Valley)
2 teaspoons BBQ seasoning (recommended: McCormick Grillmates)
For Salad:
8 cups romaine or iceberg lettuce, chopped
2 tomatoes
1 cucumber
16 baby carrots
Preheat oven to 425 degrees F.
Line baking sheet with aluminum foil and place popcorn chicken on baking sheet and bake for 8 to 10 minutes. Remove from oven and let cool.
For dressing:
Mix together ranch dressing and BBQ seasoning in small bowl and set aside.
For salad:
Place lettuce in large bowl. Add dressing and toss with tongs until lettuce is coated. Set aside. Cut each tomato into 8 wedges and the cucumber into 16 slices. Divide lettuce onto 4 cold plates. Arrange each salad with 4 tomato wedges, 4 cucumbers, and 4 baby carrots. Top each salad with 1/4 of the chicken pieces.

Ingredients
4 Idaho potatoes, peeled and cubed
1 1/2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper
1 (6-ounce) skinless chicken breast
3 slices cooked bacon, crumbled
1/4 cup diced celery
1/4 cup diced onion
1 garlic clove, minced
1/2 cup mayonnaise
2 teaspoons mustard
1 tablespoon paprika
2 tablespoons chopped parsley leaves
2 sage leaves, chopped
2 heads Bibb lettuce
Directions
Preheat oven to 400 degrees F.
Place potatoes on a sheet tray, toss with oil, season with salt and pepper, and roast until golden and tender, about 30 minutes.
Meanwhile, in a saucepan cover chicken with water and bring to a simmer over medium heat. Poach until cooked through, about 15 to 20 minutes. Remove from poaching liquid, let cool for a bit, and cut chicken into cubes.
In a large bowl, toss together potatoes, chicken and bacon with the celery, onions, and garlic. Add the mayonnaise, mustard, paprika, herbs, salt and freshly ground black pepper, to taste. Mix until well combined.
Serve salad in Bibb lettuce cups. Roll up and eat.

Feed Your Tummy
MICHIGAN SECRET POT ROAST
1 large pot roast (approx 4-5 lbs)
1 envelope Lipton Onion Soup
Mix salt, pepper, garlic and onion powder to taste beef bouillon powder (optional)
Sprinkle pot roast with seasonings and beef boullion if you have some available.
Open envelope and pour entire onion soup mix into the center of two long sheets (double thickness) of aluminum foil wrap. Roll the beef in the soup mix to coat. Wrap tightly with the foil, sealing well. Place package in a large open roaster in oven and set on low heat (275-300 degrees F) for 4-5 hours. If meat is frozen when you start, set oven to 225-250 degrees F for 8-10 hours instead.
During the last hour or so of cooking, add foil-wrapped potatoes to the pan for a side dish. Scrub potatoes well, rub with olive oil and wrap in foil. During last 10 minutes of cooking, unwrap top of potato, make a large X with knife, squeeze potato to soften and drop in butter or cheese to melt. Cook 10 more minutes under broiler. Season with salt and pepper and top with gravy from roast.
Serve.
This is an easy to prepare meal for those days when you're busy elsewhere than the kitchen as it takes very little preparation and basically cooks itself. An added bonus is that the cleanup is easy - everything is cooked in foil!
You can also make this in a Slow cooker (or even in your barbecue or smoker if you plan to have it going most of the day.)

I found new a guilty pleasure. I was scanning the tv looking for something to watch. I ran across Sunday Best. BET ran a Sunday Best marathon and i watch the shows in an one day time span. The funny thing was I sat throughout eight shows and didn't get to see the grand finale.
This season which began a couple of weeks ago has raised the bar as far as talent goes. I don't catch it on it's original air date, I watch it via Internet. It's good thing for me, because I can watch my favorite performance over again and there are many. If you like good music and you have this Jones for reality shows this is the right show for. Sundays Best is reminiscent of another singing competition on the Fox Network. This show, however, has heart and appeal the soul of music. Kirk Franklin is at his best. The judges BeBe Winans and Mary,Mary are knowledgeable and forthcoming. This competition is about the music not pretty faces.
Look for, it airs on the Bet Network. Check your cable listings for air dates and times. Listen to Gospel Cafe for highlights and my take on the show.

1/2 cup quick-cooking oats
Topping:
1/3 cup ketchup
2 tablespoons brown sugar

Directions
Preheat oven to 375 degrees F.
Mix all meatloaf ingredients well and place in a baking dish. Shape into a loaf.
Topping:
Mix ingredients for topping and spread on loaf. Bake for 1 hour.

Braised Pork Chops
Serves 4

Pork chops and potatoes don't have to take a lot of time! You'll enjoy this meal in minutes!
Ingredients
2 tablespoons extra virgin olive oil (EVOO)
4 thick-cut (about an inch), bone-in, pork chops
Salt and pepper
4 medium Yukon Gold potatoes, each cut into 6 wedges
1 large red onion, peeled, root end trimmed but left intact, halved through the root, then each half cut into 6 wedges through the root (to help hold them together)
2 Gala, Honeycrisp or Golden Delicious apples, cored and cut into 8 wedges
5 sprigs fresh thyme
1 cup cloudy apple cider (eyeball it)
2 cups chicken stock (eyeball it)
3 tablespoons real maple syrup or brown sugar
Juice of 1/2 lemon
Crusty bread, to serve alongside for mopping up sauce
Preparation
Place a large, heavy-bottomed pot over medium-high heat with two turns of the pan of EVOO, about 2 tablespoons. While the EVOO is heating up, season both sides of the pork chops with salt and pepper. Add the chops to the pot and brown on all sides. Remove the chops and reserve, loosely covered with foil.
Add the potatoes to the pan and cook, stirring occasionally, until golden brown, 4-5 minutes. Add the onions to the pan and cook until golden brown, 4-5 minutes.Add the apples, thyme sprigs, apple cider, chicken stock and maple syrup to the pot and bring up to a bubble.
Nestle the browned pork chops back into the pot, tucking them in amongst the onions and potatoes. Cover with a tight-fitting lid and let simmer until the chops are cooked through and the potatoes are tender, 10-15 minutes.
Fish out the thyme stems and discard. Squeeze the juice of the lemon over the pot and give everything a quick stir.
Serve the pork chops topped with the veggies and pan sauce with plenty of crusty bread and a salad alongside.

Steak With Green Beans and Mushrooms for Two
Ingredients
2 (5 ounce) chuck eye steak1 (14 1/2 ounce) can green beans1 (4 ounce) can mushroom2 teaspoons garlic, minced2 teaspoons black pepper1 teaspoon salt1 tablespoon olive oil1/4 cup beer
Directions
Cover both sides of the steaks with first the salt and pepper, and then the olive oil.Place in a pre-heated dry skillet (cast iron is best) and sear for 3 1/2 minutes on each side.Remove the meat, and add the beer, green beans, and mushrooms to the hot pan.Stir for 2 minutes, then add the garlic and stir for an additional minute.Serve with a starch of your choice, and cold beer or wine.

Ingredients
1 pound boneless, skinless chicken breast, cut into 8 pieces and lightly pounded
Coarse salt and cracked black pepper
2 egg whites, beaten
2 tablespoons grated Parmesan
1/4 cup chopped parsley
1 tablespoon finely grated lemon zest (I use a rasp)
1 cup all-purpose flour, for dusting
2 teaspoons extra-virgin olive oil
1 lemon, cut into 8 wedges
Directions
Season chicken generously with salt and pepper on both sides. Place egg whites in a shallow dish or plate. Whisk in cheese, parsley, and lemon zest. Dredge each chicken piece through the egg mixture, shaking off excess, and set in flour. Shake the plate so chicken pieces get coated, turn chicken over and repeat. Shake off all of the excess flour. Lay on a cookie sheet lined with parchment and set next to stove.
Heat oil in a 12-inch non-stick pan over medium high heat. When hot but not smoking, add chicken and cook, turning once, until golden and cooked through, about 2 minutes per side. Serve with lemon wedges.

Ingredients
1/2 pound elbow macaroni
3 tablespoons butter
3 tablespoons flour
1 tablespoon powdered mustard
3 cups milk
1/2 cup yellow onion, finely diced
1 bay leaf
1/2 teaspoon paprika
1 large egg
12 ounces sharp cheddar, shredded
1 teaspoon kosher salt
Fresh black pepper
Topping:
3 tablespoons butter
1 cup panko bread crumbs
Directions
Preheat oven to 350 degrees F.
In a large pot of boiling, salted water cook the pasta to al dente.
While the pasta is cooking, in a separate pot, melt the butter. Whisk in the flour and mustard and keep it moving for about five minutes. Make sure it's free of lumps. Stir in the milk, onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
Temper in the egg. Stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni into the mix and pour into a 2-quart casserole dish. Top with remaining cheese.
Melt the butter in a saute pan and toss the bread crumbs to coat. Top the macaroni with the bread crumbs. Bake for 30 minutes. Remove from oven and rest for five minutes before serving.
Remember to save leftovers for fried Macaroni and Cheese.

Feed Your tummy as we "Feed Your Soul"

Ingredients:For Blue Cheese Mashed 2 pounds White rose potatoes peeled diced 1 cup heavy cream Salt and Pepper to taste3 tablespoons unsalted butter Garlic salt to taste2 tablespoons goat cheese 3 tablespoons blue cheese For Skirt Steak2 pieces of 8 oz skirt steak cut in half G. Garvin's blackening spice Olive oil1 cup porcini mushrooms sliced 1 tablespoon chopped shallots¼ cup Gentlemen Jack Daniel ¼ cup chicken stock2 tablespoons olive oil 2 tablespoon unsalted butter Salt to taste Pepper to taste1 tablespoon chopped parsley
Procedure:For Blue Cheese mashed 1. Wash, peel, dice and boil the potatoes drain and keep warm.2. Add 1 cup heavy cream, salt and pepper to taste.3. Mash the potatoes and fold in, unsalted butter and goat cheese. Mix well.4. Add garlic salt to taste and Blue cheese crumbles to finish.
For Skirt Steak1. Season the skirt steak with blackening spice and set aside.2. In a large sauté pan add enough olive oil to coat pan.3. Add skirt steak to pan and brown on both sides to desired doneness.4. Move steak over in the pan and add shallots sauté until transparent.5. Then add mushrooms, salt & pepper to taste cook until mushrooms are soft. Add chicken stock, simmer and reduce liquid by half.6. Finish with butter whisking in until creamy and chopped parsley.
To plate place mashed potatoes into the middle of the plate and steak around the perimeter.
